Recipe: Beetroot Rice

Hey, I am back again with another recipe.
Today's recipe is one of my favorites. Favorite because its yummy, healthy and really easy to make and mainly because my daughter loves it.
As a child I was a non-fussy eater; my mom was so proud. ;)
But if there was one thing that I didn't like eating was beetroot. Mom really tried to explain to me, how good it was, but I never really listened. Over time, my mom stopped trying, because like I told you I was a good eater and I would eat everything else. So it wasn't like, I was malnourished.

When I discovered this recipe a few months ago, I was surprised because it was so tasty. So I decided to make it and serve it to Ishanvi. And I was right, she liked it too. Whenever I find a recipe that is adult and toddler friendly, I do a happy dance.
So here I am sharing the recipe.

Ingredients:
(This portion serves one toddler)

half a beet root, grated
half an onion finely chopped
half a tomato finely chopped
1/2 bell pepper/capsicum finely chopped
handful of cilantro finely chopped
2 large garlic cloves ground in a paste
1 bowl of cooked rice
1 teaspoon pav bhaji masala
1 pinch red chilly powder,
1 pinch of hing
1 pinch of cumin seeds
1 pinch of coriander powder
Salt to taste
few curry leaves
Oil or ghee as per your preference



Method:

In a non stick pan, pour oil/ghee and once it is heated, add cumin seeds, curry leaves and hing. Now add the onions and garlic paste. Saute for 2 minutes and add the tomatoes and capsicum and keep sauteing for 2 mins.

Now add the pav bhaji masala, red chilly powder, coriander powder and salt.




Now add the beet and saute some more.

Cover and cook for a few more minutes.


Now add the cilantro and saute for 2 minutes and t
hen add the rice.


Mix well and serve hot with a dollop of ghee and garnish with a cashew nut.
